Digital Curation Fellow at the National Agricultural (NAL) Library Taira Sullivan recently published the digital online exhibit “How Did We Can?- The Evolution of Home Canning Practices.” This exhibit draws heavily on early to mid-twentieth century USDA resources and showcases the NAL’s extensive collection of historic materials related to home canning. Highlighted topics include the evolution of canning techniques and equipment, consequences of improper canning, and the importance of home canning through World War I and World War II. Home canning was particularly crucial during World War II when over four billion cans were processed at home in 1943 alone.
